For a vegan stir fry, this recipe sure is meaty! An Asian-inspired cuisine that’s perfect for easy dinners and meal preps. Crispy tofu, savory soy grounds flavored in black bean garlic sauce, with a tiny bit of kick? This dish is bursting with flavors and it is super easy to make!
Why this calls for a meaty recipe, you may ask? Because my choice of protein has both tofu and soy grounds. Now, while I don’t often use mocked soy meats into an Earth Kitchen recipe, I find this one to be exceptional. Not only will soy grounds add more bodied texture to the dish, it will absorb more flavor than it would with the plain tofu. Tofu, as you may know by now, needs a lot of flavor absorption and a little more marinating – so I wanted something complimentary to it.

My choice of sauce, as the superstar of this dish, is a black bean garlic sauce. Something you can find in an Asian section of a supermarket or grocery. Black bean garlic sauce is basically a fermented product and quite salty. You may have encountered our first recipe using fermented black beans with our Vegan Bagoong Recipe – with the use of tausi beans. It has the same taste profile, only black bean garlic sauce has added flavors with it.
This recipe is bold in flavors but don’t be intimidated, it is the perfect tasty meal for your easy dinners and meal preps!
Tofu Black Bean Stir Fry
Ingredients
- 1 block extra firm tofu diced into small squares
- 1 cup soy grounds see notes
- 1 tbsp onions chopped
- 4 cloves garlic minced
- 1 tbsp green onions chopped
- 1 pc Thai red chili crushed (optional)
- 1/2 cup frozen vegetables medley defrosted
- 1 tbsp tomato paste
- 2 tbsp black bean garlic sauce see notes
- 1.5 tbsp organic brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- salt & pepper to taste
- sesame seeds for garnish
- canola or vegetable oil for frying
Instructions
- Prepare two pans and preheat. On the first skillet, coat about 2 tbsp with a neutral flavored oil (such as vegetable or canola) until evenly spread to the pan. Pan fry tofu on each side until are golden brown. This should take about 3-4 minutes on each side depending on your stove top.
- On the second preheated pan, coat about 1 tbsp of neutral flavored oil and start by adding your aromatic ingredients like the onions and garlic. Sprinkle with a little bit of salt and pepper. Toss around until onions are translucent.
- Add the frozen vegetables & soy grounds to the onions and garlic. Sauté until well combined.
- Mix in the rest of the ingredients – tomato paste, black bean garlic sauce, sugar, and rice vinegar.
- Once the tofu has been completely pan fried, turn off heat from the first pan, and combine with the soy grounds & vegetables mixture. Stir until it's well combined. Turn off heat.
- Drizzle with sesame oil and sprinkle with green onions and sesame seeds.
- Best served with rice.
