Vegan Egg Fried Rice

Equipment

  • wok (optional but recommended)

Ingredients

  • 2 cups cooked rice day old
  • 3 cloves garlic minced
  • ½ medium (½ cup) yellow or white onions diced
  • ½ cup frozen mixed vegetables thawed
  • ¾ cup (2 folded slices) Vegan Egg I used Just Egg (use any eggy substitute you wish)
  • 1 stalk green onion thinly sliced

FOR THE SEASONINGS

  • 2 tbsp low sodium soy sauce
  • tsp white pepper
  • ½ tsp sesame oil
  • salt & black pepper to taste
  • sesame seeds & chili oil (any red chili paste) (to serve - optional)

Instructions

  • Prepare cooked rice. Be sure that rice is at least a day old for the best texture. Cooking freshly steamed rice will make your rice sticky and stocky. It will also absorb less flavor.
  • Preheat wok to medium high heat. Coat with a tablespoon with oil. Note, if you are using a wok on fire, work fast as ingredients may burn easily.
  • Sauté onions and garlic until fragrant. Season with a pinch of salt & pepper. Toss in the thawed mixed vegetables and stir well until well combined. Add your vegan "egg" to sauté. Stir and let it sit for 1-2 minutes to heat up.
  • Toss in the rice and stir fry until all ingredients are well combined. Season with soy sauce, white pepper, and pinch of salt & black pepper to taste.
  • Turn off heat. Drizzle a bit of sesame oil and garnish with green onions. Add sesame seeds for presentation and chili paste for heat (optional).
